Rinse cooked rice and serve on warmed plate. Serve Chilli on same plate, sprinkle with the cheese. Best served with fresh buttered bread or rolls but you could have corn bread or tacos instead.

Lamb Yorkshire

Lamb is as Yorkshire as erm cricket? Well anyway sheep have been important to the Yorkshire economy for centuries and this recipe honours that association. I came up with this offering after finding I hadn’t any sausages to make a Toad in’t Hole.

Ingredients – to serve 4

4 lamb steaks @ 100g each

Basic Yorkshire batter mix

1 medium egg (for batter)

Dried rosemary

Dried mint

2 tablespoons light cooking oil

1 lamb stock cube
